Jackfruit, to me is half way between albacore tuna and mango. When I first got it, I didn’t have interest, it eerily looked like dark chicken meat.
I love the taste of sushi tuna but not eating it…ever again. (Raw fish will give you parasites, even one bite, and tuna are too beautiful to hook. Ouch!)

‘Tunaaah’ tartare (mimics raw tuna)
-Vegan mayo
-Jackfruit, right out of the bag. (Rinse in a colander or pasta strainer) When I get this stuff, it goes so fast, between me and guests, I don’t even have to freeze it. It will go in days. Although it’s a huge 4 1/2 pound bag, so you could freeze extra. I take it out of the bag once it arrives, put it in large glass bowls filled with water, in the fridge. Fun! Yup, real fun. After a while I get sick of it in my fridge because it literally looks just like chicken or turkey, so I freeze it.
-Organic tomatoes or watermelon (preferably organic with seeds). Can alternatively, soak organic sun dried tomatoes in water overnight if it’s fall or winter.
-Sesame Seeds (I use raw organic, you can use any, or toasted)
-Cold-pressed organic olive oil
-Chives, cilantro or celery (organic best)
Watermelon tartare (mimics 'beef’ tartare)
-Diced organic watermelon, tomatoes,
-skin of a red pepper cooked
